Anita Kušar, from our partner the Nutrition Institute, has published a paper about FOX in the bi-weekly peer-reviewed journal Agro FOOD Industry Hi-Tech.

The paper is titled “Innovative on-site mild processing of fruit and vegetables for increasing local production of foods with high nutritional quality” and it focuses on the two approaches used in the project to assess the products’ nutritional quality: the nutrient density approach and the health impact approach. It also introduces the project’s background and relevance for sustainable food systems in the EU, the food circles, and the potential impacts and opportunities.
