The Online Workshop on Business Model Validation and Robustness Check for the economic use of innovative down-scaled and mobile food-processing units for low-temperature drying using pulsed-electric field (PEF) pre-treatment will be held on May 16th from 13.00 to 16.00 online.

The workshop is part of the European HORIZON 2020 project Food Processing in a bOX (FOX), which aims to stimulate short food supply chains for fruit and vegetables by applying small innovative mild processing technologies which, amongst other things, can be used to recover and valorise food waste streams and surplus. The approach creates business opportunities for regional hubs and provides qualitative processed foods to be indulged by the local community. This workshop will provide valuable insights and strategies for stimulating sustainable and innovative development in the food sector.

The workshop will be a good opportunity to discuss with researchers, entrepreneurs and industry experts about the business models for the future of our food systems, to gain new skills and knowledge on mild processing technologies, business modelling, and economic validation against future scenarios. The session will be interactive and the participants will be involved in some exercises to provide feedback and produce a common basis for discussion.
